Yummy Caramel Mug Cake That’s Seriously The Best

This Caramel mug cake is the easiest to make and the quickest to cook. In just 100 seconds (1 min 40 sec) you’ve got the most delicious moist cake ever. It can be made for one, but if you’re feeling generous there’s enough for two if you like sharing.

Here’s the good news, it will satisfy your sweet tooth cravings, it’s healthy…much healthier than shop bought cakes, more gut friendly, high-fibre, low carb compared to shop bought cakes, gluten-free, dairy-free, no butter or oils, nut-free, cane sugar-free, and low calorie.

Agave Nectar was used to make this sweet mug cake not cane sugar, xylitol or erythritol or stevia. The reason for not using those artificial sugars is Agave Nectar has a pleasant caramel taste and many people can be allergic to those sugars.

Agave Nectar is low glycemic and its carb content is still much lower than cane sugar and isn’t as harsh on the gut like xylitol or erythritol.

This cake has no butter or added fats; other than the natural fats in the coconut flour this cake is basically oil-free.

TIPS COOKING YOUR CAKE:

This recipe is great because you don’t need a bunch of tools to make it. A half litre Pyrex jug and a fork is all you need to mix it together. Pop the jug straight into the microwave as is or divide it into 2 mugs.

This cake was developed solely for the microwave not to the oven. It’s best not to over microwave it because it’ll diminish the fluffiness making it quite dry…1 minutes 40 seconds is the best timing. If microwaving isn’t your thing, then pop it into the oven for approximately 10 minutes on 180c.

INGREDIENTS

  • 2 tbsp Organic Coconut Flour

  • 2 tbsp Organic Chocolate Powder

  • 1 tsp Baking Powder

  • 2 tbsp Agave Nectar

  • 1 Medium Egg

  • Pinch of Himalayan Salt

  • 1 tbsp Coconut Milk (or your favourite)

DIRECTIONS

  • Place all the dry ingredients in your Pyrex jug or divide between two mugs.

  • Add all the wet ingredients.

  • Mix together with a folk.

  • Place in the microwave. On high 1000w cook for 100 seconds (1 min 40 sec).

  • Serve as is or with your favourite yogurt.
